25 years ago, I volunteered on Burmese refugee camp in Thailand for 4 months. Food was simple on the camp. The only provisions provided were poor quality rice and fish paste. My camp was fortunate because the land owner let the refugees raise pigs and chickens, and grow vegetables to supplement their diet (most camps were not so fortunate). Some weekends I would go into town to meet with other volunteers from along the border. Before cell phones and in the beginning days of the internet, the only way to get news was to meet face to face. We’d head to the night market for dinner and my favorite stall was the one that served satay! Rice, chicken, and peanut sauce always made for a great meal! I still love it today. We didn’t have peanut sauce on the camp but it could be found at the night market in the nearest town. Originating in Indonesia, peanut sauce is popular throughout Asia. I’ve tried many recipes but this is my favorite. Taken from “The Low Fodmap Diet Step by Step”. It’s easy and quick. Enjoy with salad or meat of your choice. Peanut sauce makes everything taste good!
Recipe for easy and quick peanut sauce. Blend or whisk:
– 1/2 cup peanut butter
-1/2 cup coconut milk (I used ½ cup coconut cream)
– 1/4 cup sugar (I used 2 tbsp honey)
– 2 tbsp lime juice
– 2 tsp fish sauce
*Coconut cream gives the sauce richer taste and thicker consistency.
*If you prefer honey, make sure it’s one without a strong taste.
